Breakfast is simply delicious when you have these Mini Breakfast Melts on hand!
 
Ingredients:

12 slices Nature’s Harvest® Honey Wheat Made with Whole Grain Bread

4 eggs

2 tablespoons milk

Salt and pepper, to taste 

1 tablespoon olive oil

2 cups spinach

⅓ cup Goat cheese

2 tablespoons melted butter

2 cloves garlic, minced

1 tablespoon parsley, chopped

6 slices Canadian bacon

Directions:

1. Preheat oven to 400˚F. In a large mixing bowl, whisk together the eggs, milk and a pinch of salt and pepper.

2. Heat the olive oil in a frying pan over medium heat. Add the spinach and cook until wilted.  Add the egg mixture to the pan and cook while stirring until the eggs are just cooked. Remove from heat and add in Goat cheese. In a small bowl, combine melted butter, garlic and parsley.

3. Using a rolling pin, flatten each slice of bread. Cut out 12 circles using a cookie cutter or simply a drinking glass. On 6 of the circles, lay Canadian bacon followed by some of the egg mixture on top. Whisk together 1 egg and a tablespoon of water. Brush around the edges of the bottom circle of bread. Top with the other 6 circles and with your fingers, gently press together the edges of bread.  

4. Place 6 melts on a baking sheet and brush with the garlic parsley butter. Bake for 15 minutes or until bread is toasted.
