INGREDIENTS:

2 slices Nature’s Harvest® Stone Ground 100% Whole Wheat Bread

1 15-ounce can black beans, drained

¼ sweet potato, mashed

½ cup breadcrumbs

2 tablespoons onion, chopped

1 large egg

¼ teaspoon chili powder

½ tablespoon sweet chili sauce

Dash of salt and pepper

½ tablespoon butter

2 slices Pepper Jack cheese

1 avocado, sliced

CORN SALSA:

1 cup corn

½ cup grape tomatoes, sliced

¼ cup red onion, diced

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper to taste

CHILI MAYO:

½ cup mayonnaise

¼ cup sweet chili sauce

2 teaspoons lemon juice

Salt and pepper to taste


DIRECTIONS:

1. Place the black beans and mashed sweet potato in a medium bowl and mash with a fork. Mash until beans are mostly broken up but some whole beans visible. Add in breadcrumbs, onion, egg, chili powder and sweet chili sauce and season with a bit of salt and pepper. Stir until combined. If it seems like it’s not holding, add more bread crumbs. 

2. Make the corn salsa and chili mayo. In a small bowl, combine corn, tomato slices, red onions, chili powder, olive oil, and salt and pepper to taste. In another small bowl combine mayonnaise, sweet chili sauce, lemon juice, and salt and pepper. Set both aside. 

3. Heat butter in a skillet and toast one side of each slice of bread. Form the bean mixture into 2 patties, and place each patty into the skillet to cook for 5 to 7 minutes on each side. Layer Pepper Jack cheese on top of each patty and let melt.

4. Spread chili mayo over one slice of bread, then top with patty, avocado, corn salsa and a little more chili mayo then cap with the second slice of bread.
